#DD – Vanilla Cream Caramels from Sofia Hunt

Vanilla Cream Caramels

In my latest release, The Bargain Bride, the heroine, Lucy, is a horrible cook but completely unaware of her lousy culinary skills. In fact, she actually believe she’s an exceptional cook. The men in her life suffer in silence as they force themselves to eat her unpalatable meals. Fortunately, the recipe below is one of my mother’s (not Lucy’s). My mother was an excellent cook. She often made cookies and candy for Christmas. These caramels are some of my all-time favorites.

2 cups sugar

2 cups cream

1 cup corn syrup

1/3 cup butter

2 teaspoons vanilla

Cook all ingredients, but vanilla, over low heat until it forms a solid ball in cold water. Remove from heat and add vanilla. Pour into greased pan; cut into squares.
